"Five Sauces for Fish and Seafood"

When looking for a homemade recipe for some of the fish and seafood dishes you wish to create, consider the following sauces, which can add both flavor and flair to your creations.

1) Red Cocktail Sauce

(makes about 2 ¼ cups)

Ingredients

1 ½ cups of ketchup
½ cup of bottled chili sauce
½ teaspoon of granulated garlic
½ teaspoon of onion powder
¼ cup of prepared horseradish
2 tablespoons of fresh lemon juice
2 tablespoons of Worcestershire sauce
½ teaspoon of Tabasco sauce
¼ teaspoon of freshly ground pepper
Salt, to taste

Instructions

1) In a medium-size bowl, combine all of the ingredients. Whisk until well blended.

2) Before serving, cover and refrigerate until well chilled.

2) Garlic Sauce

This sauce is best served over fish, meat or vegetables. The recipe makes 1¼ cups.

Ingredients

5 cloves of garlic
¼ cup of water
½ teaspoon of salt
2 slices of white bread (trimmed)
1/3 cup of slivered almonds
2 tablespoons of white vinegar
½ cup of olive oil

Instructions

1) Use a food processor bowl to process and mince the garlic.

2) Add the water and the salt, bread, almonds, and white vinegar. Process until smooth.

3) With the processor running, pour the olive oil through the food chute in a slow steady stream until all of the ingredients are combined. Chill.

3) Curry Sauce for Shrimp

(makes 1 cup)

Ingredients

1 (8-ounce) carton of sour cream
1/3 cup of mayonnaise
1 teaspoon of grated onion
1 teaspoon of curry powder
1 teaspoon of lemon juice
¼ teaspoon of Worcestershire sauce
1/8 teaspoon of Tabasco sauce

Instructions

1) Mix all of the ingredients together in a small glass or plastic bowl.

2) Cover the bowl and refrigerate for several hours before serving.

4) Chinese Plum Sauce

Ingredients

1 cup of plum jelly (melted)
½ cup of sweet pickle relish
1 tablespoon of wine vinegar
1 tablespoon of sugar

Instructions

1) Combine all of the ingredients. Mix until smooth.

5) Mango Barbeque Sauce

Ingredients

1 ripe mango (peeled, pitted and cut into small cubes)
1 cup of prepared mango chutney
1 cup of finely chopped onion
1 tablespoon of minced garlic
1 (28-ounce) can of peeled plum tomatoes (crushed, with juices)
2 tablespoons of cider vinegar
1 tablespoon of molasses
1 teaspoon of Tabasco sauce

Instructions

1) Combine all of the ingredients in a heavy saucepan.

2) Simmer the ingredients (covered) over low heat for 20 minutes or until the sauce becomes thick.

3) Cool slightly.

4) Puree the sauce until smooth using a food processor or blender.
