Homemade Condiments

Have you ever wondered what goes into some of the tasty condiments that accompany your hamburgers and hot dogs during a summer barbeque? The next time you consider grabbing the store-bought versions of your favorite ketchup and barbeque sauce, try making your own using the following suggestions:

Homemade Tomato Ketchup Ingredients

4 ½ pounds of full-flavored tomatoes (very ripe and chopped)
4 onions (finely chopped)
2 garlic cloves (chopped)
1 tablespoon of salt
1 tablespoon of freshly ground black pepper
½ teaspoon of cayenne pepper
6 whole cloves
2 cups of packed brown sugar
2 cups of white wine vinegar

Barbecue Sauce Ingredients

2 tablespoons of vegetable oil
2 to 3 cloves of garlic (crushed)
1 small onion (finely chopped)
6 to 8 whole cloves
½ teaspoon of cayenne pepper
½ teaspoon of cinnamon (or cumin)
1 cup of ketchup
½ cup or cider (or malt) vinegar
½ cup of soy sauce
1/3 cup of packed dark brown sugar
2 tablespoons of Worcestershire sauce
1 tablespoon of molasses

When grilling fish, try making your own tartar sauce to make your meal complete.

Tartar Sauce Ingredients

½ cup of mayonnaise
3 tablespoons of dill pickles (finely chopped)
1 tablespoon of onion (finely chopped)
1 tablespoon of fresh parsley (chopped)
2 tablespoons of milk
1 teaspoon of Dijon mustard
